  • 1 cup almond butter (smooth or creamy)
  • 1 cup granulated sugar
  • 1 large egg

Instructions

  • Preheat your air fryer to 320°F (160°C). This is important for even cooking! If your air fryer doesn’t have a preheat function, just let it run for about 5 minutes before adding the cookies.
  • In a medium bowl, combine the almond butter, sugar, and egg. Mix until everything is well combined and you have a smooth dough. It might take a minute or two for the egg to fully incorporate, but just keep stirring.
  • Roll the dough into 1-inch balls. Place the dough balls on the air fryer basket lined with parchment paper. Flatten each ball slightly with a fork, making a criss-cross pattern. This helps them cook evenly.
  • Air fry for 6-8 minutes, or until the cookies are golden brown around the edges. Keep a close eye on them, as air fryers can vary. You want them to be cooked through but still soft in the middle.
  • Carefully remove the cookies from the air fryer and let them cool on the parchment paper for a few minutes before transferring them to a wire rack to cool completely. They’ll be a little soft when they first come out, but they’ll firm up as they cool.
