  • 3 cups almond flour
  • 1 1/2 cups granulated sugar
  • 3 large egg whites, at room temperature
  • 2 teaspoons almond extract
  • 1/4 teaspoon salt
  • Powdered sugar, for rolling

Instructions

  • Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together the almond flour, granulated sugar, and salt.
  • In a separate bowl, lightly beat the egg whites with a fork until they are frothy. Add the almond extract to the egg whites. Pour the wet ingredients into the dry ingredients and mix until a sticky dough forms.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  • Place the powdered sugar in a shallow bowl. Using a tablespoon or a small cookie scoop, scoop out portions of the chilled dough and roll them into balls. Roll each ball in the powdered sugar, coating it completely.
  • Arrange the cookies on the prepared baking sheet, leaving about 2 inches between each cookie. Bake for 20-25 minutes, or until the cookies are lightly golden around the edges and cracked on top.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
