  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 pound pasta (penne, fettuccine, or your favorite shape)
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 tablespoon Cajun seasoning (adjust to taste)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 8 ounces white cheddar cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley, for garnish (optional)

Instructions

  • Cook the Pasta. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
  • Sauté the Chicken. Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Season with salt, pepper, and Cajun seasoning. Remove the chicken from the skillet and set aside.
  • Make the Garlic Cream Sauce. In the same skillet, melt the remaining 2 tablespoons of butter over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Be careful not to burn the garlic!
  • Build the Sauce. Pour in the chicken broth and heavy cream. Bring to a simmer, stirring occasionally. Reduce the heat to low and stir in the shredded white cheddar cheese and Parmesan cheese until melted and smooth. This might take a few minutes, so be patient.
  • Combine and Serve. Add the cooked chicken and drained pasta to the skillet with the cheese sauce. Toss to coat everything evenly. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency. Serve immediately, garnished with fresh parsley, if desired.
