  • 1.5 pounds Yukon gold potatoes, peeled and cubed
  • 1 (12-14 ounce) package smoked sausage, sliced
  • 1 tablespoon olive oil
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 cup milk
  • 1 (1 ounce) package ranch dressing mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Salt and pepper to taste
  • Chopped green onions or parsley, for garnish (optional)

Instructions

  • Preheat the oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish or a large oven-safe skillet.
  • Add the cubed potatoes to a large pot and cover with cold water. Bring to a boil and cook for about 5-7 minutes, until slightly tender. Drain well.
  • Heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
  • In a large bowl, combine the cooked potatoes, sliced smoked sausage, sautéed onion and garlic, cream of chicken soup, milk, and ranch dressing mix. Stir well to combine.
  • Pour the mixture into the prepared baking dish or skillet. Sprinkle the cheddar and Monterey Jack cheese evenly over the top. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the potatoes are tender.
  • Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped green onions or parsley, if desired.
