  • 1 pound cooked chicken, shredded or diced
  • 1/2 cup Caesar dressing (store-bought or homemade)
  • 1/4 cup grated Parmesan cheese
  • 4 large flour tortillas
  • 4 cups chopped romaine lettuce
  • Optional: cherry tomatoes
  • Optional: croutons
  • Optional: bacon bits

Instructions

  • If you’re using rotisserie chicken, shred it with two forks. If you’re using leftover baked or grilled chicken, dice it into bite-sized pieces. The key is to have it ready to be tossed with the dressing.
  • In a medium bowl, combine the shredded or diced chicken with the Caesar dressing and Parmesan cheese. Stir until the chicken is evenly coated.
  • Lay the flour tortillas flat on a clean surface. Divide the chopped romaine lettuce evenly among the tortillas, creating a bed for the chicken mixture. Don’t overstuff the tortillas.
  • Spoon the chicken mixture over the lettuce on each tortilla. If you’re using any optional toppings like cherry tomatoes, croutons, or bacon bits, now’s the time to add them.
  • Fold in the sides of each tortilla and then roll it up tightly from the bottom. If you want to prevent the wraps from unraveling, you can secure them with toothpicks or skewers.
