  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 2 cups cooked chicken, shredded
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 package (14.1 ounces) refrigerated pie crusts
  • 1 egg, beaten (for egg wash)
  • Instructions

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery and cook until softened, about 5-7 minutes, stirring occasionally.
  • Stir in the thyme and rosemary and cook for 1 minute more, until fragrant. Add the flour and cook for another minute, stirring constantly to create a roux.
  • Gradually whisk in the chicken broth until smooth, then stir in the milk. Bring the mixture to a simmer, stirring occasionally, until it thickens slightly, about 5-7 minutes.
  • Stir in the peas, corn, shredded chicken, salt, and pepper. Reduce heat to low and simmer for 5 minutes, allowing the flavors to meld together.
  • Preheat your oven to 375°F (190°C). Roll out one of the pie crusts and place it in a 9-inch pie dish. Trim and crimp the edges.
  • Pour the chicken mixture into the prepared pie crust.
  • Roll out the second pie crust and place it over the filling. Trim and crimp the edges to seal. Cut several slits in the top crust to allow steam to escape. Brush the top crust with the beaten egg.
  • Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly. Let it cool for at least 10 minutes before serving.
