  • 4 Cornish game hens (about 1 pound each), thawed
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, quartered

Instructions

  • Preheat your oven to 400°F (200°C). While the oven is heating, pat the Cornish game hens dry with paper towels.
  • In a small bowl, combine the olive oil, minced garlic, chopped rosemary, salt, and pepper. Mix well.
  • Using your hands, generously rub the garlic-rosemary mixture all over the Cornish game hens, making sure to get under the skin of the breast if you can. Season the inside of the cavities as well.
  • Place a quarter of lemon inside the cavity of each hen.
  • Place the seasoned hens in a roasting pan or on a baking sheet lined with parchment paper. Roast for 50-60 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  • Remove the hens from the oven and let them rest for 10 minutes before serving.
