  • 1 cup full-fat cottage cheese
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup milk (dairy or non-dairy)
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: Berries, nuts, chocolate shavings, whipped cream

Instructions

  • Combine Ingredients. In a blender or food processor, combine the cottage cheese, cocoa powder, milk, maple syrup, vanilla extract, and salt. Make sure your cottage cheese is somewhat drained if it seems watery.
  • Blend Until Smooth. Blend the mixture until it’s completely smooth and creamy. This might take a minute or two, depending on your blender. Stop and scrape down the sides as needed to ensure everything is well incorporated. You’re looking for a silky, mousse-like consistency.
  • Taste and Adjust. Give the mousse a taste and adjust the sweetness or cocoa powder to your liking. Add more maple syrup if you prefer it sweeter, or a little more cocoa powder for a richer chocolate flavor. A tiny pinch more salt can also enhance the sweetness!
  • Chill (Optional). For the best texture, chill the mousse in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld together and the mousse to firm up slightly. However, if you’re impatient (like me sometimes!), you can definitely enjoy it right away.
  • Serve and Enjoy. Spoon the mousse into serving dishes and top with your favorite toppings. Fresh berries, chopped nuts, chocolate shavings, or a dollop of whipped cream are all great options. Dig in and enjoy!
