  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 tablespoons Cajun seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley, for garnish
  • Salt and pepper to taste

Instructions

  • Prepare the Chicken. Pat the chicken cubes dry with paper towels and season with salt, pepper, and 1 tablespoon of Cajun seasoning. This helps the chicken brown nicely and absorb the flavors.
  • Sauté the Vegetables. Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and cook until softened, about 3-5 minutes. Then, add the minced garlic, chopped red bell pepper, and chopped green bell pepper. Cook for another 3-5 minutes, until the vegetables are tender-crisp.
  • Brown the Chicken. Add the seasoned chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Make sure not to overcrowd the pan; cook in batches if necessary to ensure even browning.
  • Create the Sauce. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. This adds so much flavor! Stir in the remaining 1 tablespoon of Cajun seasoning. Bring the mixture to a simmer.
  • Finish the Dish. Reduce the heat to low and stir in the heavy cream and Parmesan cheese. Simmer for 2-3 minutes, until the sauce has thickened slightly. Taste and adjust seasoning as needed.
  • Garnish and Serve. Garnish with chopped fresh parsley and serve hot over rice, pasta, or cauliflower rice.
