  • 1 onion, peeled and quartered
  • 3-4 cloves of garlic, minced
  • 6-8 small red potatoes, quartered
  • 4 large carrots, cut into 2-inch pieces

  • 4 cups beef broth
  • 1 teaspoon black pepper
  • 3-4 lb corned beef brisket

Instructions

1. Place the onion and garlic in the bottom of the crockpot.

2. Rinse the corned beef under cold water and pat dry with paper towels. Place the corned beef on top of the onions and garlic.

3. Arrange the potatoes, carrots, and cabbage around the corned beef.

4. Pour the beef broth over the meat and vegetables. Season with black pepper.

5. Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the meat is tender.
