  • 1.5 lbs boneless, skinless chicken breasts
  • 1/2 cup almond flour
  • 1/2 cup grated Parmesan cheese, finely grated
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, lightly beaten
  • 1/4 cup olive oil
  • 2 cups marinara sauce, your favorite brand or homemade
  • 8 oz fresh mozzarella cheese, sliced

Instructions

  • Preheat your oven to 375°F (190°C). Gently pound the chicken breasts to an even thickness, about ½ inch. This ensures they cook evenly. Pat them dry with paper towels; this helps the coating adhere better.
  • In a shallow dish, combine the almond flour, grated Parmesan cheese, garlic powder, dried oregano, salt, and pepper. Whisk it all together until it’s evenly distributed. This dry mixture will give our chicken that crispy parmesan flavor.
  • In a separate shallow dish, lightly beat the eggs. Dip each chicken breast into the egg mixture, making sure it’s fully coated. Then, dredge it in the almond flour mixture, pressing gently to ensure the coating sticks.
  • Heat the olive oil in a large oven-safe skillet over medium-high heat. Carefully place the coated chicken breasts in the hot skillet. Sear for about 3-4 minutes per side, until golden brown. They don’t need to be fully cooked at this point, just nicely browned. After testing this several times, I learned that a good sear is key to a flavorful crust.
  • Pour the marinara sauce over the seared chicken. Arrange the sliced mozzarella cheese on top of each chicken breast.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the cheese is melted, bubbly, and lightly golden. A meat thermometer inserted into the thickest part of the chicken should read 165°F (74°C).
  • Remove the skillet from the oven and let the Chicken Parmesan rest for a few minutes before serving. This allows the juices to redistribute, resulting in a more tender and flavorful dish.
