  • 1 1/2 cups warm milk (dairy or non-dairy)
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 tablespoon sugar
  • 2 large eggs, lightly beaten
  • 1/4 cup olive oil
  • 1 1/2 cups gluten-free all-purpose flour blend (with xanthan gum)
  • 1 cup tapioca starch
  • 1/2 cup brown rice flour
  • 2 tablespoons psyllium husk powder
  • 1 teaspoon salt
  • 2 tablespoons melted butter, for brushing (dairy or non-dairy)

Instructions

  • Activate the Yeast: In a large bowl, combine the warm milk, yeast, and sugar. Let it sit for 5-10 minutes until foamy.
  • Add Wet Ingredients: Whisk in the eggs and olive oil into the yeast mixture.
  • Combine Dry Ingredients: In a separate bowl, whisk together the gluten-free flour blend, tapioca starch, brown rice flour, psyllium husk powder, and salt.
  • Combine Wet and Dry: Gradually add the dry ingredients to the wet ingredients, mixing on low speed with an electric mixer (or by hand) until a sticky dough forms.
  • First Rise: Cover the bowl with plastic wrap and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  • Shape the Rolls: Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking pan. Gently punch down the dough and turn it out onto a lightly floured surface. Divide the dough into 12 equal pieces. Shape each piece into a ball and place them in the prepared pan.
  • Second Rise: Cover the pan with a clean kitchen towel and let the rolls rise for another 30 minutes in a warm place.
  • Bake: Bake for 20-25 minutes, or until the rolls are golden brown on top.
  • Brush with Butter: Immediately brush the warm rolls with melted butter.
  • Cool and Serve: Let the rolls cool slightly in the pan before serving. Enjoy them warm!
