  • 2 cups of sweetened shredded coconut
  • 1 cup of sweetened condensed milk
  • 1 teaspoon of vanilla extract
  • 1 cup of dark chocolate chips
  • ½ cup of whole almonds
  • a pinch of salt

Instructions

  • Preheat your oven to 325°F (160°C).
  • In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt. Stir until well mixed.
  • Line a baking dish with parchment paper.
  • Scoop out small portions of the coconut mixture and form bite-sized mounds. Press an almond on top of each mound.
  • Chill the mounds in the fridge for about 30 minutes until set.
  • Melt dark chocolate chips in a microwave-safe bowl in 20-second intervals until smooth.
  • Dip each mound into the melted chocolate, letting excess drip off, then return to the parchment-lined dish.
  • Allow chocolate to harden at room temperature for about 15-20 minutes.
