  • 1 cup strong brewed coffee, cooled
  • 1/2 cup heavy cream, chilled
  • 2 tablespoons powdered erythritol
  • 1/4 teaspoon vanilla extract
  • Ice cubes

Instructions

  • Brew the Coffee. Start by brewing your coffee, making it a little stronger than usual. Let it cool completely. I usually brew mine the night before and keep it in the fridge.
  • Make the Whipped Cream. In a chilled bowl, combine the heavy cream, powdered erythritol, and vanilla extract. Using an electric mixer (handheld or stand mixer), beat on medium-high speed until stiff peaks form. This usually takes about 3-5 minutes. Be careful not to overwhip, or you’ll end up with butter!
  • Assemble the Iced Coffee. Fill a glass with ice cubes. Pour the cooled coffee over the ice, leaving about an inch of space at the top.
  • Top with Whipped Cream. Gently spoon the keto whipped cream on top of the iced coffee. Add a dusting of cocoa powder or cinnamon for an extra touch, if you like.
