  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed light brown sugar
  • 1/2 cup light corn syrup
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 3 large eggs, lightly beaten
  • 3 cups pecan halves or pieces

Instructions

  • Preheat your oven to 350°F (175°C). In a large bowl, cream together the softened butter and sugar until light and fluffy. Then, gradually add the flour and salt, mixing until just combined. Be careful not to overmix.
  • Press the dough evenly into the bottom of a 9×13 inch baking pan. Prick the crust several times with a fork.
  • Bake the crust for 18-20 minutes, or until lightly golden brown.
  • In a medium saucepan, melt the butter over medium heat. Stir in the brown sugar, corn syrup, granulated sugar, and salt. Bring the mixture to a simmer, stirring constantly, until the sugar is dissolved. Remove from heat and let it cool slightly for about 5 minutes.
  • Whisk in the vanilla extract, then gradually whisk in the beaten eggs. Be sure to whisk constantly to prevent the eggs from scrambling. The mixture should be smooth and well combined.
  • Stir in the pecans until they are evenly distributed throughout the filling. Pour the pecan mixture over the pre-baked crust, spreading it out evenly.
  • Bake for 25-30 minutes, or until the filling is set and the top is golden brown. The filling should be slightly jiggly but not liquidy.
  • Let the bars cool completely in the pan before cutting them into squares.
