  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 3 cups cream cheese, softened
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 tablespoon lime zest
  • ½ cup fresh lime juice
  • ¼ cup tequila (optional)
  • 1 tablespoon cornstarch
  • Pinch of salt

Instructions

  • Preheat your oven to 325°F (162°C).
  • In a bowl, combine graham cracker crumbs and melted butter until resembling wet sand.
  • Press the mixture firmly into the bottom of a 9-inch springform pan and bake for 10 minutes.
  • Let the crust cool slightly.
  • In a large mixing bowl, beat the cream cheese until fluffy.
  • Gradually add sugar and mix until combined.
  • Add eggs one at a time, mixing well after each addition.
  • Stir in lime zest, lime juice, tequila, cornstarch, and a pinch of salt.
  • Pour the cheesecake batter into the cooled crust.
  • Place a baking dish with water on the lower rack of the oven to create steam.
  • Bake for 50-60 minutes until edges are set but center wobbles slightly.
  • Cool at room temperature, then refrigerate for at least four hours, preferably overnight.
