  • 8 oz of high-quality dark chocolate
  • 1/2 cup of heavy cream
  • 1 tsp of pure peppermint extract
  • 2 tbsp of unsweetened cocoa powder
  • 1/2 cup of crushed peppermint candies or chocolate curls
  • Pinch of sea salt

Instructions

  • Chop the dark chocolate finely and place it in a heatproof bowl.
  • In a small saucepan, heat the heavy cream over medium heat until it starts to simmer, then immediately remove from heat.
  • Pour the hot cream over the chopped chocolate and let it sit for a minute.
  • Stir gently with a spatula until you have a smooth ganache.
  • Add the peppermint extract and a pinch of sea salt; mix until fully incorporated.
  • Refrigerate the ganache for about 2 hours or until firm.
  • Scoop out small portions with a melon baller or teaspoon and roll them quickly between your palms to form smooth balls.
  • Roll each truffle in cocoa powder or crushed peppermint candies before serving.
