  • 80 grams of erythritol or preferred sweetener
  • 100 grams of almond butter or peanut butter
  • 50 grams of coconut oil
  • 1 teaspoon of vanilla extract
  • Optional: 50 grams of chopped nuts
  • Optional: 50 grams of unsweetened shredded coconut

Instructions

  • In a large bowl, mix the almond flour and cocoa powder together.
  • In another bowl, melt the almond butter and coconut oil slightly if too thick, then stir in the sweetener and vanilla.
  • Combine the wet mixture with the dry ingredients until fully mixed. If adding optional add-ins, fold them in now.
  • Roll small portions into balls and place them on a parchment-lined sheet, flattening slightly.
  • Chill in the refrigerator for at least 30 minutes until firm.
  • Store in an airtight container in the fridge for up to a week or freeze for longer storage.
