Ingredients

  • 2 cups of all-purpose flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground ginger
  • 1/2 teaspoon of salt
  • 1 cup of granulated sugar
  • 1/2 cup of brown sugar
  • 1/2 cup of unsalted butter, softened
  • 3 large eggs
  • 1 cup of pumpkin puree
  • 1/2 cup of honey
  • 1 teaspoon of vanilla extract
  • 1 cup of chopped nuts (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour a bundt pan.
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until combined.
  • In another bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, blending well after each addition. Add the pumpkin puree, honey, and vanilla extract.
  • Gradually mix in the dry ingredients until just combined. Fold in nuts if using.
  • Pour the batter into the prepared bundt pan, smoothing the top.
  • Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan for 10 minutes before inverting onto a wire rack.
