Instructions

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • In a large bowl, beat together the softened butter and granulated sugar until light and fluffy.
  • Add in the egg and vanilla extract, mixing until well combined.
  • In a separate bowl, sift together the flour, baking powder, and salt.
  • Gradually add the dry mixture to the butter and sugar combination, stirring gently just until combined.
  • Gently fold in the fresh raspberries.
  • Using a spoon or cookie scoop, portion out the dough onto the prepared baking sheets, leaving space between each cookie.
