  • cocoa powder or melted chocolate for rolling (quantity as desired)

Instructions

  • Purée the fresh raspberries in a blender and strain to remove the seeds.
  • Combine raspberry purée with heavy cream over low heat until just simmering.
  • Pour the mixture over chopped dark chocolate in a bowl, letting it sit before stirring until silky in texture.
  • Add softened butter and powdered sugar, mixing well.
  • Chill the mixture in the fridge until firm enough to scoop.
  • Scoop portions using a melon baller, then roll them into balls.
  • Roll the truffles in cocoa powder or melted chocolate, or use crushed nuts or coconut flakes for variation.
