Ingredients

  • 600 grams of boneless chicken thighs
  • 200 grams of long-grain rice
  • 750 ml of chicken broth
  • 1 medium onion, chopped
  • 3 cloves of garlic, minced
  • 200 grams of carrots, chopped
  • 1 tablespoon of thyme
  • 1 tablespoon of parsley
  • Salt and pepper to taste

Instructions

  • Season boneless chicken thighs with salt and pepper.
  • Heat a skillet over medium-high heat and sear chicken for about 3 minutes on each side until golden brown.
  • Remove chicken from skillet and place in slow cooker.
  • Sauté onions and garlic in the same skillet for a couple of minutes until sweet.
  • Add sautéed onions and garlic to the slow cooker.
  • Layer rice and carrots in the slow cooker.
  • Pour chicken broth over everything, ensuring rice is fully submerged.
  • Sprinkle herbs on top and cover the slow cooker.
  • Set to low and cook for 6-7 hours.
