  • 2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 1 pound Yukon gold potatoes, peeled and cubed
  • 1 cup frozen peas
  • Salt to taste

Instructions

  • Sear the Chicken. In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and sear on all sides until lightly browned.
  • Sauté the Vegetables. Add the chopped onion, carrots, and celery to the skillet. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  • Transfer to Slow Cooker. Transfer the seared chicken and sautéed vegetables to the slow cooker. Pour in the chicken broth and diced tomatoes. Add the dried thyme, dried rosemary, and black pepper.
  • Add Potatoes and Cook. Stir in the cubed potatoes. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is tender and the potatoes are easily pierced with a fork.
  • Add Peas and Serve. Stir in the frozen peas during the last 30 minutes of cooking time. Season with salt to taste. Serve hot and enjoy!
