  • 3-4 lbs corned beef brisket with spice packet
  • 1 onion, peeled and quartered
  • 3-4 garlic cloves, minced
  • 4 carrots, peeled and cut into chunks
  • 1 lb baby potatoes
  • 1 head of cabbage, cut into wedges
  • 4 cups beef broth
  • Salt and pepper to taste

Instructions

  • Place the onion, garlic, carrots, and potatoes in the bottom of the slow cooker.
  • Place the corned beef on top of the vegetables and sprinkle the spice packet over the meat.
  • Pour the beef broth over everything.
  • Cover and cook on low for 7-8 hours or until the meat is tender.
  • About 30 minutes before serving, add the cabbage wedges to the slow cooker.
  • Once the cabbage is tender, remove everything from the slow cooker and let the meat rest before slicing.
  • Serve the sliced corned beef with the vegetables and enjoy!
