Ingredients

  • 8 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1 teaspoon peppermint extract
  • 1/4 teaspoon salt
  • 1/2 cup crushed peppermint candies, for topping

Instructions

  • In a large bowl, beat together the softened cream cheese and butter until smooth and creamy.
  • Gradually add the sifted powdered sugar to the cream cheese mixture, beating on low speed until combined. Be sure to scrape down the sides of the bowl as needed.
  • Add the peppermint extract and salt, and beat until well combined. The mixture should be smooth and creamy.
  • Lightly dust a work surface with powdered sugar. Roll the peppermint dough into a log about 1 inch in diameter. Wrap the log in plastic wrap and refrigerate for at least 30 minutes to firm up.
  • Remove the dough from the refrigerator and unwrap it. Slice the log into 1/4-inch thick rounds. Place the rounds on a parchment-lined baking sheet.
  • Sprinkle the crushed peppermint candies evenly over the top of each peppermint. Gently press the candies into the dough so they stick.
  • Refrigerate the peppermints for at least 1 hour before serving. Store in an airtight container in the refrigerator.
