Ingredients

  • 6 large egg yolks
  • 1/2 cup granulated sugar
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup bourbon (optional, or substitute with apple cider)
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 vanilla bean, split and scraped (or 1 teaspoon vanilla extract)
  • Pinch of salt
  • Whipped cream for garnish (optional)
  • Extra nutmeg for garnish (optional)

Instructions

  • Whisk the Egg Yolks and Sugar: In a large bowl, whisk together the egg yolks and granulated sugar until the mixture is pale yellow and slightly thickened. This usually takes about 2-3 minutes.
  • Heat the Milk and Cream: In a medium saucepan, combine the whole milk, heavy cream, cinnamon, cloves, ginger, salt, and the split vanilla bean (or vanilla extract). Heat over medium heat, stirring occasionally, until the mixture is steaming gently but not boiling.
  • Temper the Egg Yolks: Slowly drizzle about 1/2 cup of the hot milk mixture into the egg yolk mixture, whisking constantly. Repeat with another 1/2 cup of the milk mixture.
  • Combine and Cook: Pour the warmed egg yolk mixture back into the saucepan with the remaining milk mixture. Cook over low heat, stirring constantly with a wooden spoon or spatula, until the mixture thickens enough to coat the back of the spoon. This usually takes about 5-7 minutes.
  • Stir in Bourbon and Nutmeg: Remove the saucepan from the heat and stir in the bourbon (if using) and ground nutmeg. If you used a vanilla bean, remove it at this stage. Let the eggnog cool slightly before transferring it to a pitcher or container.
  • Chill and Serve: Cover the eggnog and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld. Before serving, stir the eggnog well. Serve chilled, garnished with whipped cream and a sprinkle of extra nutmeg, if desired.
