2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
Green gel food coloring
Instructions
In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large mixing bowl, cream together the butter and sugar until light and fluffy.
Add the egg and vanilla extract to the butter mixture and beat until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Divide the dough in half and tint one portion green with the gel food coloring.
Shape both portions of dough into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.
Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
On a floured surface, roll out the green dough and plain dough to 1/4-inch thickness.
Use a shamrock-shaped cookie cutter to cut out cookies from both doughs.
Place the cookies on the prepared baking sheet and bake for 8-10 minutes, or until the edges are just starting to turn golden.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
