  • 2 lbs of sweet potatoes, peeled and cubed
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • ½ cup melted butter
  • 2 large eggs
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 ½ cups mini marshmallows

Instructions

  • Preheat your oven to 350°F (175°C).
  • Place the cubed sweet potatoes in a large pot, cover with water, and boil until tender (about 15-20 minutes). Drain and let cool.
  • Transfer the sweet potatoes to a mixing bowl and puree until smooth.
