30-Minute Tomato Corn Chowder

A creamy, comforting chowder featuring sweet corn and savory tomatoes, made from scratch in just 30 minutes.

Ingredients

  • 1/3 cup onion, finely diced
  • 2 garlic cloves, minced
  • 2 tbsp flour
  • 1 tsp basil
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp smoked paprika
  • 16 oz tomatoes (diced)
  • 15 oz creamed corn
  • 1/2 cup milk
  • 2 tbsp heavy cream
  • 3/4 cup chicken broth
  • 12 oz corn
  • 4 slices bacon
  • 2 tbsp parsley, chopped

Instructions

  1. Cut the bacon into small pieces.
  2. Cook the bacon in a large pot or Dutch oven over medium heat until very crispy, about 8-10 minutes.
  3. Stir the bacon occasionally while cooking.
  4. Transfer the cooked bacon to a paper towel-lined plate and set aside.
  5. Leave about 2 tablespoons of bacon fat in the pot.
  6. Add the diced onion to the bacon fat in the pot.
  7. Sauté the onion for 3-4 minutes until it becomes translucent and fragrant.
  8. Add the minced garlic to the pot.
  9. Cook the garlic for another 30 seconds until aromatic.
  10. Sprinkle the flour over the cooked onions and garlic.
  11. Stir constantly for 2-3 minutes to toast the flour.
  12. Add the basil to the pot.
  13. Add the salt to the pot.
  14. Add the pepper to the pot.
  15. Add the smoked paprika to the pot.
  16. Pour in the chicken broth.
  17. Pour in the diced tomatoes (with their juices).
  18. Pour in the creamed corn.
  19. Pour in the milk.
  20. Pour in the heavy cream.
  21. Stir constantly to prevent lumps from forming.
  22. Break up any large pieces of tomato with the back of your spoon as you stir.
  23. Bring the mixture to a gentle boil over medium-high heat, stirring occasionally.
  24. Boil for about 5-7 minutes.
  25. Add the corn niblets to the chowder.
  26. Reduce the heat to medium-low.
  27. Cover the pot.
  28. Simmer for 8 minutes, stirring occasionally.
  29. Ladle the hot chowder into bowls.
  30. Top each serving with crumbled crispy bacon.
  31. Top each serving with fresh chopped parsley.

Notes

Always cook bacon first to flavor the cooking fat for a richer chowder base.
Finely dice the onion for quick cooking and a smooth texture.
Stir constantly when adding flour and liquids to prevent lumps.
Taste and adjust seasoning at the end; creamed corn can add sweetness that may need balancing.
