Deliciously moist and spiced gluten-free, whole-grain apple cider cupcakes topped with a fluffy, spiced buttercream frosting – perfect for autumn!

Ingredients

  • 1 1/3 cup oat flour (certified gluten-free) or gluten-free all purpose flour (or regular flour)
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • pinch of cloves
  • 1/2 cup butter, melted (coconut oil or dairy-free butter alternative)
  • 1/2 cup brown sugar
  • 1/3 applesauce (sweetened or unsweetened)
  • 1/2 cup apple cider
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup butter, softened
  • 1-2 tbsp water, milk or more apple cider
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • pinch of nutmeg
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a cupcake pan with cupcake liners.
  3. Spray the cupcake liners with non-stick spray.
  4. In a small mixing bowl, combine oat flour, baking powder, salt, 1 1/2 tsp cinnamon, 1/2 tsp nutmeg, allspice, and cloves.
  5. Stir the dry ingredients together until well combined.
  6. In a large mixing bowl, cream the 1/2 cup melted butter and brown sugar together with a mixer.
  7. Add applesauce, 1/2 cup apple cider, and 1 tsp vanilla to the wet mixture.
  8. Mix again until all ingredients are well combined.
  9. Add eggs to the mixture.
  10. Beat the eggs into the mixture for one minute.
  11. Add the dry ingredients mixture to the wet ingredients mixture.
  12. Stir together until you have a smooth cupcake batter.
  13. Fill your cupcake liners about 3/4 way full with batter.
  14. Bake for 18-22 minutes.
  15. Check for doneness: the tops should be springy to touch and a toothpick inserted into the center should come out clean.
  16. Allow cupcakes to cool completely before frosting.
  17. To make the Spiced Buttercream, in a large mixing bowl, combine the 1/2 cup softened butter, 1 tbsp apple cider (or water/milk), 1 tsp vanilla, 1/2 tsp cinnamon, and a pinch of nutmeg.
  18. Blend together well with a hand mixer.
  19. Add 1 cup of powdered sugar to the bowl.
  20. Mix well with a hand mixer until combined.
  21. Add another cup of powdered sugar to the bowl.
  22. Blend together again until smooth.
  23. Beat the frosting for one to two minutes, or until it is nice and fluffy.
  24. If the frosting is too thick, add another tablespoon of apple cider (or water/milk) until it reaches your desired consistency.
  25. Once cupcakes are cooled, frost them.
  26. Optionally, add sprinkles or cinnamon sugar on top.
  27. Devour the cupcakes!

Notes

Ensure all ingredients are at room temperature for best results, especially the butter for the frosting.
Do not overmix the cupcake batter; stop mixing as soon as the ingredients are combined.
Always wait for cupcakes to cool completely before frosting to prevent the frosting from melting.
