These delightful Blackberry Crumb Bars feature a buttery, crumbly crust and topping, filled with a sweet-tart blackberry mixture.

Ingredients

  • 1 1/2 cups flour
  • 1/4 cup sugar
  • 1/4 cup brown sugar, packed
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 cup unsalted butter, cold
  • 1 large egg yolk
  • 2 cups blackberries, fresh
  • 1 tablespoon lemon juice
  • 1/4 cup sugar
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Spray an 8×8-inch baking pan with baking spray.
  3. Add flour, 1/4 cup sugar, brown sugar, baking powder, salt, cold unsalted butter, and egg yolk to a food processor.
  4. Pulse the ingredients until a crumbly dough forms.
  5. Take half of the crumbly dough and press it gently into the bottom of the prepared baking pan.
  6. Spread the pressed dough into an even layer.
  7. In a large bowl, combine the fresh blackberries, lemon juice, 1/4 cup sugar, and cornstarch.
  8. Pour the blackberry mixture evenly over the pressed crust in the baking pan.
  9. Crumble the remaining half of the dough mixture over the top of the blackberries.
  10. Bake for 40-45 minutes.
  11. Bake until the topping is golden brown and the filling is bubbly.

Notes

Always use cold butter for the crumb for best texture.
Do not overmix the dough in the food processor.
Allow bars to cool completely before slicing for clean cuts.
Fresh blackberries are recommended for the best flavor and texture.
