These no-bake energy balls capture all the delicious flavors of carrot cake in a healthy, convenient snack.

Ingredients

  • 1 cup medjool dates (pits removed)
  • 1/3 cup shredded carrots
  • 1 cup walnuts
  • 1 tbsp chia seeds
  • 1/3 cup shredded unsweetened coconut
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • pinch of salt
  • 1 tsp vanilla extract
  • extra 1/2 cup shredded coconut for rolling

Instructions

  1. Place the pitted medjool dates into a food processor.
  2. Add the shredded carrots to the food processor.
  3. Add the walnuts to the food processor.
  4. Add the chia seeds to the food processor.
  5. Add the 1/3 cup shredded unsweetened coconut to the food processor.
  6. Add the cinnamon to the food processor.
  7. Add the nutmeg to the food processor.
  8. Add the pinch of salt to the food processor.
  9. Add the vanilla extract to the food processor.
  10. Pulse all ingredients in the food processor until well combined and a sticky dough forms.
  11. Scoop out a portion of the dough using a spoon.
  12. Roll the scooped dough into a ball with your hands.
  13. Pour the extra 1/2 cup shredded coconut for rolling into a shallow dish.
  14. Roll each ball into the shredded coconut to coat completely.
  15. Place the coated energy balls on a plate or in an airtight container.
  16. Refrigerate the energy balls for at least one hour to firm up before serving.

Notes

Ensure dates are soft; soak in warm water if they are firm.
Process until the mixture is sticky and holds together when pressed.
Chilling is essential for the balls to firm up properly.
Store in an airtight container in the fridge for best freshness.
