A comforting one-pot meal featuring golden chicken, tender long-grain rice, and a creamy, cheesy garlic parmesan sauce.

Ingredients

  • 1.5 lb chicken (cut into 1-inch bite-sized pieces)
  • 1 tsp paprika
  • 1 tsp garlic salt
  • 1/2 tsp black pepper
  • 1/4 tsp dried thyme
  • 2.5 tbsp butter
  • 1 medium onion (finely diced)
  • 1.5 tbsp garlic (freshly minced)
  • 1.5 cups long-grain white rice
  • 3 1/4 cups chicken broth
  • 1/2 cup parmesan cheese (freshly shredded)
  • 2/3 cup heavy cream
  • 2 tbsp fresh parsley (finely chopped)

Instructions

  1. Pat the chicken pieces dry with paper towels.
  2. Season the chicken generously with paprika, garlic salt, black pepper, and dried thyme.
  3. Toss to coat the chicken evenly.
  4. Finely dice the onion into 1/4-inch pieces.
  5. Freshly mince the garlic.
  6. Melt 2.5 tablespoons butter in a large pot over medium-high heat.
  7. Cook until the butter is foaming subsides.
  8. Add the seasoned chicken pieces to the pot.
  9. Cook for 5-6 minutes, stirring occasionally, until the chicken is lightly browned on the outside.
  10. Transfer the chicken to a plate and set aside.
  11. In the same pot, add the diced onion.
  12. Cook for 3-4 minutes, stirring frequently, until softened and fragrant.
  13. Add the minced garlic.
  14. Cook for 1 minute more until aromatic.
  15. Return the seared chicken to the pot.
  16. Stir in the rice, coating it thoroughly in the butter and aromatics.
  17. Toast the rice for 1-2 minutes until it becomes slightly fragrant and translucent at the edges.
  18. Pour in the chicken broth.
  19. Bring the mixture to a boil over high heat.
  20. Immediately reduce the heat to low.
  21. Cover the pot with a lid.
  22. Simmer for 15-20 minutes until the rice is tender and the liquid is absorbed.
  23. Remove the pot from heat.
  24. Let it sit, covered, for 2 minutes.
  25. Gently stir in the heavy cream.
  26. Stir in the freshly shredded parmesan cheese until fully combined and creamy.
  27. Transfer the garlic parmesan chicken and rice to serving bowls or plates.
  28. Top each portion with fresh chopped parsley.
  29. Add an additional sprinkle of parmesan cheese for serving.

Notes

Always use freshly shredded parmesan for the best melt and creamiest sauce.
Patting the chicken dry is key for a good browning and more flavor.
Don’t lift the lid too often while the rice is simmering to ensure even cooking.
Taste and adjust seasonings at the end to suit your preference.
