Deliciously soft sugar cookies topped with a tangy lemon cream cheese frosting and an assortment of fresh, colorful fruits.

  • 1 cup butter , softened
  • 1 ¼ cups granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla extract
  • 2 ½ cups all-purpose flour
  • ½ teaspoon cream of tartar
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • 8 ounces cream cheese , softened
  • 6 Tablsepoons butter , softened
  • 2-3 cups powdered sugar
  • ½ teaspoon vanilla extract
  • 1 lemon , zested
  • Various colored fruit for toppings such as blueberries, strawberries, kiwi, mandarin oranges, pineapples

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, cream together 1 cup softened butter and 1 1/4 cup granulated sugar with a handheld mixer for 2-3 minutes until light and fluffy.
  4. Add the large egg, egg yolk, and 2 teaspoons vanilla extract and mix until just combined.
  5. In a separate medium-sized mixing bowl, whisk together 2 1/2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon cream of tartar, and 3/4 teaspoon salt.
  6. Gradually add the dry ingredients to the wet ingredients and mix just until combined.
  7. Use a large cookie scoop (2 Tablespoons of dough) to scoop dough.
  8. Roll each scoop of dough into a ball.
  9. Place dough balls on the prepared baking sheets about 2-inches apart.
  10. Refrigerate the cookie sheets with dough for 10 minutes to chill the dough.
  11. Bake for 10-12 minutes, or until the center is set.
  12. Let cookies cool on the pan for a few minutes.
  13. Move cookies to a cooling rack to cool completely.
  14. Meanwhile, in a large mixing bowl, use a hand mixer to beat 1 package softened cream cheese and 6 Tablespoons softened butter until smooth.
  15. Add 2-3 cups powdered sugar, 1/2 teaspoon vanilla extract, and the zest of one lemon.
  16. Beat until the frosting is smooth and creamy.
  17. When cookies are completely cooled, generously frost each cookie.
  18. Decorate with cut fresh fruit.

Notes

Ensure butter and cream cheese are softened to room temperature for best results.
Do not overmix the cookie dough once the flour is added.
Chill the dough for 10 minutes before baking to prevent spreading.
Let cookies cool completely before frosting to avoid melting.
