Rich, fudgy dark chocolate brownies with a secret ingredient: zucchini! So moist and decadent, nobody will guess there’s a vegetable inside.

  • 1/4 cup solid coconut oil
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 1/2 cups finely shredded zucchini
  • 1/4 teaspoon cinnamon
  • 2/3 cup dark cocoa powder
  • 1/2 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2-3 Tablespoons dark chocolate chips
  • coarse sea salt, for garnish if desired

Instructions

  1. Preheat oven to 350 degrees F (175 C).
  2. Spray an 8×8 square pan with nonstick baking spray.
  3. Combine the solid coconut oil and granulated sugar in a large bowl.
  4. Mix until well combined.
  5. Add the vanilla extract, large eggs, and finely shredded zucchini to the mixture.
  6. Mix again until all ingredients are well incorporated.
  7. Stir in the cinnamon, dark cocoa powder, all-purpose flour, baking powder, and salt.
  8. Mix gently until a brownie batter forms and ingredients are just combined.
  9. Spread the batter evenly into the prepared 8×8 pan.
  10. Sprinkle the top with dark chocolate chips.
  11. Bake for 28-30 minutes.
  12. Remove the pan from the oven.
  13. Cool completely before cutting into squares.
  14. Sprinkle with coarse sea salt, if desired.
  15. Store in a tightly sealed container.

Ensure coconut oil is solid, not melted, for best texture.
Do not overmix the batter; mix until just combined.
Bake until edges are set and a toothpick comes out with moist crumbs.
