Deliciously fudgy and moist brownies secretly packed with zucchini, making them a healthier and incredibly satisfying treat.

  • 2 cups finely grated zucchini (I firmly packed it in)
  • 1 cup brown sugar
  • 1 1/3 cup unsweetened applesauce
  • 2 eggs
  • 2 teaspoons vanilla
  • 2/3 cup oat flour
  • 1 cup cocoa powder
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 cup of chocolate chips and/or nuts (Optional Add-ins)
  • 1/2 cup chocolate chips (For Optional Frosting)
  • 1/2 cup butterscotch chips (For Optional Frosting)
  • 1/2 cup peanut butter (For Optional Frosting)
  • OR spread on some Nutella (For Optional Frosting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13 inch baking pan thoroughly.
  3. In a large bowl, mix together the finely grated zucchini, brown sugar, unsweetened applesauce, eggs, and vanilla extract until well combined.
  4. In a separate medium bowl, stir together the oat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt.
  5. Add the dry ingredients to the wet ingredients.
  6. Stir until just combined, being careful not to overmix.
  7. Fold in the chocolate chips and/or nuts, if you are using them.
  8. Pour the brownie batter evenly into the prepared 9×13 inch pan.
  9. Bake for about 55 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  10. Remove the brownies from the oven and let them cool completely in the pan on a wire rack.
  11. If making the optional frosting, melt together the chocolate chips, butterscotch chips, and peanut butter until smooth.
  12. Spread the melted frosting or Nutella over the cooled brownies, if desired.
  13. Slice and serve your delicious zucchini brownies.

Notes

Do not squeeze the water out of the zucchini; its moisture is key.
Avoid overmixing the batter for the fudgiest texture.
Let the brownies cool completely before slicing for clean cuts.
Store leftovers in an airtight container at room temperature.
