  • 2 cloves garlic, minced

  • 1 tablespoon Dijon mustard

  • 8 ounces egg noodles
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook egg noodles according to package directions. Drain and set aside.
  • Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  • Add chopped onion and minced garlic to the skillet with the ground beef. Cook until the onion is softened and translucent, about 5 minutes. Then, add the sliced mushrooms and cook for another 3-5 minutes, until they are tender.
  • Sprinkle flour over the ground beef and vegetable mixture. Cook for 1 minute, stirring constantly, to create a roux. Gradually whisk in beef broth, making sure to scrape up any browned bits from the bottom of the skillet. Bring the mixture to a simmer.
  • Reduce heat to low and simmer for 5-7 minutes, or until the sauce has thickened slightly. Stir occasionally to prevent sticking.
  • Remove the skillet from the heat. Stir in sour cream, Dijon mustard, and Worcestershire sauce. Season with salt and pepper to taste.
  • Add the cooked egg noodles to the skillet and toss to coat with the sauce. Garnish with fresh parsley and serve immediately.
