A creamy, hearty, and incredibly flavorful one-pot chowder made with savory sausage, sweet corn, and tender potatoes. Perfect for a comforting meal!

  • 1 lb ground sausage
  • 1 medium onion (finely diced)
  • 15 oz diced potatoes
  • 3 tbsp flour
  • 3 1/2 cups milk
  • 1/2 cup heavy cream
  • 30 oz cream style corn
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1 tsp salt
  • 1 1/4 tsp pepper
  • 2 green onions (thinly sliced, for garnish)

Instructions

  1. Heat a large pot or Dutch oven over medium-high heat.
  2. Add the ground sausage to the pot.
  3. Break the sausage into small crumbles with a wooden spoon as it cooks.
  4. Cook the sausage for 5-7 minutes until mostly cooked through and no longer pink.
  5. Add the diced onion to the pot with the sausage.
  6. Continue cooking for 2-3 minutes until the onion softens and becomes translucent.
  7. Sprinkle the flour over the sausage and onion mixture.
  8. Stir constantly for about 2 minutes to create a roux.
  9. Gradually pour in the milk, stirring continuously to prevent lumps.
  10. Bring the milk mixture to a gentle simmer.
  11. Add the diced potatoes to the pot.
  12. Add the cream style corn to the pot.
  13. Stir well to combine all ingredients.
  14. Reduce heat to medium-low.
  15. Simmer for 20-25 minutes, stirring occasionally to prevent sticking.
  16. Ensure the potatoes are tender and the chowder is creamy.
  17. Stir in the garlic powder.
  18. Stir in the smoked paprika.
  19. Stir in the salt.
  20. Stir in the pepper.
  21. Taste the chowder and adjust seasonings as needed.
  22. Ladle the hot chowder into bowls.
  23. Top each serving with the thinly sliced green onions.
  24. Serve immediately while piping hot.
