Easy no-bake energy balls packed with oats, peanut butter, honey, M&M’s, and chocolate chips for a delicious, satisfying snack.

Ingredients

  • 3 cups quick oats
  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt
  • 1/2 cup miniature M&M’s
  • 1/4 cup + 2 tablespoons mini chocolate chips

Instructions

  1. Add quick oats to a very large bowl.
  2. Add creamy peanut butter to the bowl.
  3. Add honey to the bowl.
  4. Add vanilla extract to the bowl.
  5. Add fine sea salt to the bowl.
  6. Add miniature M&M’s to the bowl.
  7. Add mini chocolate chips to the bowl.
  8. Beat all ingredients with a hand mixer on low speed until a thick mixture forms.
  9. Alternatively, use a stand mixer with a paddle attachment to mix until a thick mixture forms.
  10. If the mixture is too sticky, add a few more tablespoons of oats and mix again.
  11. If the mixture is too dry, add a little more peanut butter or honey and mix again until it rolls easily.
  12. Use a 1-tablespoon measuring spoon or a 1-1/2 tablespoon cookie scoop to portion the dough.
  13. Tightly roll the portioned dough into balls.
  14. Place the rolled balls on a parchment-lined plate or tray.
  15. Refrigerate for 30 minutes to 1 hour, or until firm.
  16. Transfer the firm balls to an airtight container for storage.

Notes

Use creamy peanut butter, not natural, for best results.
Quick oats are essential for the correct texture.
Adjust mixture consistency with extra oats or peanut butter/honey as needed.
Refrigeration is crucial for the balls to firm up properly.
