A wonderfully moist and zesty loaf cake, perfect for breakfast, a snack, or dessert.

Ingredients

  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup plain full-fat Greek yogurt
  • 1 cup granulated sugar
  • 3 eggs
  • 1 tablespoon orange zest
  • 1/4 cup freshly squeezed orange juice
  • 1 teaspoon vanilla extract
  • 1/2 cup olive oil or vegetable or canola oil
  • icing sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease an 8.5 x 4.5 inch loaf pan.
  3. Flour the greased loaf pan.
  4. In a medium bowl, whisk together the flour, baking powder, and salt.
  5. In a large bowl, combine yogurt, sugar, eggs, orange zest, orange juice, and vanilla.
  6. Whisk the mixture until well combined.
  7. Whisk in the olive oil until fully incorporated.
  8. Add the dry ingredients from the medium bowl to the wet ingredients in the large bowl.
  9. Stir the batter gently until just combined.
  10. Do not over-mix the batter.
  11. Pour the batter into the prepared loaf pan.
  12. Bake in the preheated oven for 50-55 minutes.
  13. The cake is done when the top is deep golden brown.
  14. Check for doneness by inserting a toothpick into the center; it should come out clean.
  15. Let the loaf cool in the pan for about 20 minutes.
  16. Transfer the loaf to a wire rack to cool completely.
  17. Dust with powdered sugar if desired before serving.

Notes

Use plain full-fat Greek yogurt for the best moist texture.
Do not over-mix the batter to keep the cake tender.
Fresh orange zest and juice provide the best flavor.
Ensure your loaf pan is thoroughly greased and floured to prevent sticking.
