Deliciously savory mini muffins packed with cheesy pizza flavor and pepperoni, perfect for snacks or appetizers.

  • ¾ cup all-purpose flour
  • ¾ teaspoon baking powder
  • 1 tablespoon Italian seasoning
  • pinch of salt
  • ¾ cup whole milk
  • 1 egg
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 cup mini pepperoni, or regular sized cut into quarters
  • ⅔ cup pizza sauce

Instructions

  1. Preheat the oven to 375°F.
  2. Grease a 24-cup mini-muffin pan with cooking spray.
  3. Set the greased muffin pan aside.
  4. In a large mixing bowl, whisk together the flour, baking powder, Italian seasoning, and salt.
  5. Pour in the milk.
  6. Add the egg to the bowl.
  7. Whisk the milk and egg into the dry ingredients until just combined.
  8. Stir in the mozzarella cheese.
  9. Stir in the Parmesan cheese.
  10. Stir in the mini pepperoni.
  11. Let the batter sit on the counter for 10 minutes.
  12. Stir the batter again.
  13. Portion the batter into the mini-muffin cups.
  14. Bake for 20-25 minutes, until puffy and golden.
  15. Remove the muffins from the oven.
  16. Serve the muffins with warmed pizza sauce for dipping.

Don’t overmix the batter; a few lumps are fine.
