An incredibly moist and flavorful pumpkin cake swirled with a sweet cream cheese filling and topped with chocolate chips.

Ingredients

  • 15.25 ounces Spice Cake Mix w/ Pudding in the mix
  • 3 large eggs
  • 1 cup canned 100% pure pumpkin
  • 3/4 cup water
  • 1/2 cup vegetable oil
  • 1/3 cup granulated sugar
  • 2 teaspoons pumpkin pie spice
  • 1/2 cup unsalted butter
  • 8 ounces cream cheese room temperature
  • 3 cups powdered sugar
  • 1/2 cup milk chocolate chips optional

Instructions

  1. Preheat your oven to 350 degrees F (175°C).
  2. Spray a 9×13 inch baking pan with non-stick cooking spray.
  3. In a large mixing bowl, add the spice cake mix, eggs, canned 100% pure pumpkin, water, vegetable oil, granulated sugar, and pumpkin pie spice.
  4. Mix the ingredients with a hand mixer or whisk until the cake mix is fully incorporated and the batter is smooth.
  5. Pour the prepared cake batter evenly into the sprayed baking pan.
  6. In a separate microwave-safe bowl, melt the unsalted butter in the microwave for 30 seconds.
  7. Add the room temperature cream cheese to the melted butter.
  8. Beat the cream cheese and butter together with a hand mixer until smooth.
  9. Add the powdered sugar to the cream cheese mixture.
  10. Beat until the powdered sugar is well combined and the filling is creamy.
  11. Place spoonfuls of the cream cheese mixture all over the top of the cake batter in the pan.
  12. Using a knife or skewer, gently swirl through the cream cheese mixture to create a marbled effect.
  13. Sprinkle the 1/2 cup milk chocolate chips evenly over the top of the cake, if using.
  14. Place the pan in the preheated oven.
  15. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  16. Remove the cake from the oven when done.
  17. Allow the cake to cool almost completely before slicing and serving. If you cut it too early, the cake will be very soft.

Ensure cream cheese is at room temperature for a smooth filling.
Do not overmix the cake batter; mix just until combined.

For extra flavor, you can lightly toast the chocolate chips before sprinkling them on top.
